I first came across beetroot houmous was when seeing it on a menu whilst eating out last month, and I just fell absolutely in love with the taste of it right away. As with a lot of things I see that I like, I attempt to try it out myself at home and fortunately my homemade beetroot houmous was a success.
In a blender I added the following untill everything is well combined and in the right thick dip like texture:
– a can of chickpeas
– 2 tablespoons of tahini
– 2 fresh beetroot peeled, sliced and boiled
– 2 tablespoons of olive oil
– 2 tablespoons of lemon juice
– a clove of garlic
Pictured is what I had for lunch today, – grilled cayenne chicken, toasted wholemeal pitta slices, and raw veg, served with of course my homemade beetroot houmous.
Today I bought some fresh beetroot from the market, then I made an ABC ‘beetroot’ super smoothie (made with 2 apples, 1 beetroot, 3 carrots, almond milk, chia seed, and ground flaxseed).
Not only I find the taste of beetroot nice and yummy but it’s also great for its health benefits as it’s known for lowering blood pressure, stabilises blood sugar, increases stamina, and is a good source of potassium, magnesium, iron, vitamins A, B6, C, folic acid, carbohydrates, protein, antioxidant, and soluble fibre.
